How long can the chocolate be kept? |
Stored with care and always in a cool dry place, the chocolate* can last for a long time. To our experience we have kept chocolates lasting up to 8 months (March 2006) without any signs of deterioration on the chocolate, except for finger nail marks caused by customers as we bring these chocolate as samples to our exhibition/road show. We also experienced some chocolate starting to crumble slowly due to poor storage.

| How long can I keep the chocolate? |
Is recommended that chocolate are store in a cool and dry place. No direct sun light and away from the sun. Anywhere hot (i.e. kitchen, car, room etc) is not advisable to store chocolate. When storing in a room, please make sure there is no direct sun light on the chocolate and the air condition is turned on to maintain a cool temperature. When transporting chocolate in the car, please make sure there is no direct sun light on to the chocolate and the air condition is turned on. Never leave the chocolate in the car when the air condition is off as the heat in the car is enough to make the chocolate moist or melt. Unless you are going to indulge yourself to some chocolate, please avoid holding the chocolate too long in your hand/palm as the heat from your body is enough to moist or melt the chocolate. The ideal temperature to store chocolate* is between 20 ° to 25 °. The chocolate* will start to moist or melt at 30 ° and above. As the Chocolate Graphics team says, when you start to perspire then you know the chocolate are in trouble. |
..................................................................................................................................... |
Why is it not recommended to store in the refrigerator? |
Chocolate are very sensitive to changes in temperature and humidity. When stored in the fridge and taken out, the chocolate experiences a drastic change in temperature and starts to moist, and water vapour starts to rise on the chocolate. After a period of time, this changes the chocolate's texture and taste as water has been introduced. A good reason to store chocolate in the fridge is when you are afraid your precious, lovely, cute etc chocolate will melt when stored somewhere in the house and you want to make the chocolate last for a good long time so you can view it whenever you wish to, without worrying about it melting. If you didn't realise as I did before, chocolates are bought off the shelf and none of any from refrigerators. |

What is Fat Bloom? |
Due to temperature and humidity changes, chocolate may start to show white spots and in some cases turn completely white. This is called Fat Bloom. The cause behind this chemistry reaction is the cocoa butter contained in the chocolate is crystallised on the surface of the chocolate. Although this creates an unappetising impression, it does not render the chocolate inedible. |
|
*Chocolate - Does not state for other chocolate in general. The chocolate* refers to Chocolate Graphics chocolate product(s). |
